This is a closed hot sandwich that came to us from Italy. In addition to their historical homeland, these sandwiches are very popular in the United States. Panini is a stand-alone dish served for lunch or dinner with a vegetable salad for Americans.

  • If you want a gluten-free panini sandwich, you can use any gluten-free bread.
  • Feel free to use any meat or cheese you have on hand. This recipe works great with everything!
  • If you have the leftover chicken, you can store it in the refrigerator to make these quick paninis later in the week!
  • Only four sandwiches can be made from these ingredients. If you want to make for a crowd, simply increase the number of ingredients.

Can you use regular bread for Chicken and Brie Panini Sandwich?

The traditional sandwich is made from Italian ciabatta bread, but you can try other options as well. Some options are classic,  Italian, focaccia, or any kind you like. If you want to use a roll of bread, slice it into 3/4-inch-thick slices or cut it length-wise.

Equipment

  • 1 panini press

Ingredients

  • ½ cup savory peach compote see recipe below
  • 4 ciabatta rolls cut in half lengthwise and again on the diagonal (as shown)
  • 1 cup fresh arugula
  • 1 chicken breast boneless, skinless, cooked and sliced thin
  • 4 oz brie rind removed and sliced

Instructions

  • Spread the savory peach compote on the cut surfaces of the ciabatta rolls.
  • Top the bottom halves of each roll with the arugula, chicken breast, and sliced Brie. Add remaining bread on top to form a sandwich.
  • Heat a large grill pan over medium heat and add the sandwiches.
  • Press down on the sandwiches with a spatula or a clean heavy cast iron skillet for better contact while grilling. 
  • Heat until the bread is toasted, approximately 4-5 minutes, before carefully turning the sandwiches.
  • Repeat on the remaining side until toasted, approximately 3-4 minutes.
  • Remove from heat and serve immediately along with some potato chips and/or choice of side dishes. Enjoy!

Notes

Tip: For best results, cut the ciabatta rolls on the diagonal prior to assembling. They are much more difficult to cut once assembled and toasted.

Peach Compote Recipe

This fruit compote can be stored in the refrigerator in an airtight container for several days, however. This quick and easy savory peach compote is as versatile as it is delicious. Try it as a sandwich spread or as a flavorful sauce for roasted fruits or vegetables. For best results, prepare this recipe 1-2 days in advance to give the flavors a chance to develop fully.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 large garlic cloves finely minced
  • ½ cup red onion finely minced, (about 1/2 medium)
  • Sea Salt to taste
  • Black Pepper to taste
  • 1 tsp dried rosemary
  • 1 tsp ground cinnamon
  • ⅛ tsp crushed red pepper flakes or ¼ tsp depending on preference
  • 2 tbsp fresh lemon juice
  • 4 large ripe peaches diced (approximately 4 heaping cups)
  • 3 tbsp maple syrup real syrup is best if possible
  • 2 tbsp water

Instructions

  • Add olive oil, garlic, and red onion to a large saucepan set over medium heat. Season with salt and black pepper, to taste, and stir to combine.  
  • Add the rosemary, cinnamon, and crushed red pepper flakes to the pan.
  • Cook, stirring occasionally, until the onion softens and the spices become very fragrant, approximately 4-5 minutes. 
  • Add the lemon juice, peaches, maple syrup, and water to the skillet and stir to combine. Increase the heat to medium-high and bring to a rapid boil.
  • Immediately reduce heat to medium and simmer, stirring occasionally, until the peaches are soft and the mixture starts to thicken, approximately 10-12 minutes.
  • Remove from heat and cool for several minutes.
  • Working in batches if necessary, transfer the warm peach mixture to a blender and quickly pulse for a few seconds just until blended, but not completely smooth.
  • Use immediately or store in the refrigerator in an airtight container for up to 3 to 4 days. Enjoy!
